Yalumba Eden Valley Roussanne, 750ml

Straw green in colour, with aromas reminiscent of walking through wild flowers; camomile, lavender, wild rose wine and the suggestion of a nearby bee hive. A silky yet defined palate, white fleshed peach, vanilla custard and cumquat, layered over fresh grapefruit acidity and a fine almond meal texture, with lingering hints of honeycomb. Roussanne grapes were harvested during the cool of evening before pressing. The juice was then placed in old oak barrels for wild fermentation, initiated by the ‘wild’ yeast nauturally present on the grapes. Post fermentation, the barrels are topped and moved to the cool room to spend the next ten months at 4oC with three weekly batonnage, assisting to develop palate weight and add a creamy texture to the wine.
