TASTING NOTES
Robe: deep, dark purple colour which heralds a highly concentrated wine.
Nose: intense and full of ripe black fruits, violets and fresh spices underscored by noble toasty notes.
Palate: ample, robust, it shows off the fantastic maturity of the grapes and the typicity of the terroir. The tannins are dense and virile but beautifully enveloped. A long finish of black fruits gives a hint as to the exceptional ageing capacity of this wine.
DESCRIPTION
- Hand picked harvest - The grape varieties are blended for the vinification of Monastère - After the malolactic fermentation, the wine is left to age eleven month in oak barrels
Serve slightly cool (16 °C) with rib steak grilled over a wood fire (vine pruning ideally!) barbecued breast of fatted duck with pan-browned potatoes and boletus mushrooms, game in a wine sauce and Pyrenean cheese
