The grape always harvested by hand, in boxes of no more than 15 kg, is collected under very particular parameters of maturity, always seeking to extol the olfactory-gustatory characteristics, which will later be developed in the wine. Once in the cellar, the clusters are selected, destemmed and covered up to carry out a cold pre-fermentation maceration in stainless steel tanks for two days, before carrying out alcoholic fermentation at 22 ° C for another 7 days. Once the fermentations are finished, they will be aged for six months in French and American oak barrels.
