The grapes are harvested at the beginning of September. After vinification and slight crushing of the grapes, a temperature-controlled (25 ° C) alcoholic fermentation is carried out on stainless steel tanks in the vinification cellar for 7 days. The grapes are then pressed and the young wine is transferred to clean stainless steel tanks to undergo malolactic fermentation, followed by a 5-month maturation. In the spring following the harvest, the wine is assembled and bottled after a light filtering.
