The Sancerre rouge from Pascal Jolivet develops aromas of red fruit. Elegant and subtle spicy flavours are the main characteristics of this Pinot Noir.
The Pinot Noir Grapes are sorted by hand and then destemmed. After 10 days of cold maceration, the fermentation starts naturally and lasts 12 to 15 days. The wine is matured in stainless steel tank.
