With a subtle and silky attack on the mouth, this Cuvee is the finest expression of fullness from very ripen blackberries' aromas. soft species finish with licorice and black pepper aromas offer originality and complexity to this wine. This wine should age quite long as its analytic characteristics already suggest. A very nice bottle to be decanted and drunk at room temperature. Light sediments at the bottom of the carafe or of the bottle are completely natural as it is a token that this wine was not filtered in order to keep its full richness.
Vineyard management: Organic management, mechanical weeding, organic phytosanitary control
Wine making: long fermentation of skins for 10 to days, alcoholic fermentation without any yeast addition. Maturation in oak barrels (at least 3 wines barrels) for at 12 to 18 months. Malolactic fermentation in barrel. No filtration when bottled
Grape: 60 % merlot, 30 % cabernet sauvignon and 10% négrette
