A beautiful, deep ruby-red colour with a violet hue, on the nose Seña 2011 others black pepper and incense notes mingled with aromas of fresh black and red fruit such as blueberries, black currant, blackberries and cherries, followed by dark chocolate and balsamic notes of sage and blond tobacco that lend a finishing touch that enhances the complexity of the blend. The palate opens smoothly, appearing long, refreshing and full of subtleties, with a broad range of flavours and a structure worthy of its complexity that provides an attractive sensation of volume and texture. ¬The grapes were handpicked in the morning and transported to the winery in 12-kg boxes for a careful inspection on a double sorting table to eliminate plant matter and imperfect berries that could affect the final quality of the wine.
Th¬e grapes were fermented in stainless steel tanks at 24°–28°C (75°–82°F), depending on the variety and the level of extraction desired. th¬ree pumpovers were carried out daily during fermentation to rotate 0.5–1.5 times the volume of the tank.
Total maceration time ranged from 18 –35 days for the Cabernet Sauvignon and Cabernet Franc, 16 –22 days for Merlot and Carmenere and 6–8 days for the Petit Verdot. ¬e final blend was racked to French oak barrels (75% new) and aged for 22 months, during which time malolactic fermentation and stabilization occurred naturally.
