A characterful blend of classic varieties with aromas of blueberries fynbos. On the palate the wine expresses beautiful fruit concentration with a long, savoury finish.
These grapes were picked at sunrise and brought into the cellar where they were crushed and de-stemmed and put into separate fermenters with a fair amount of berries kept whole and intact. The grapes were cold soaked for 5 days in these temperature-controlled tanks before natural fermentation took over for a further 10 days. The wine was drawn off the skins straight afterwards to avoid any over-extraction of tannins and colour. The was gently pressed to ensure only the softest textuRED WINE resulted which was then transferred 60% tank and 40% barrel. The barrel component was matured for 12 months before blending and bottling took place.
