Color: an intense ruby red
Aroma: rich and complex, the initial impact of raspberry and black cherry fruit is followed by delicate spicy notes of liquorice and vanilla
Flavor: the palate is supple and ample, that of a structured and balanced wine whose character is supplemented by a pleasurable and savory acidity. and aftertaste are complex and long lasting.
The grapes were picked as soon as they reached complete and high ripeness levels. After pressing, the extraction, managed both by soft pumping over and rack and return (delestage) techniques, took place in stainless steel tanks and lasted thirteen days. During this phase, the wine completed the transformation of its sugar into alcohol at a temperature held to a maximum of 79° Fahrenheit (26° centigrade). It then went through a complete malolactic fermentation in 60 and 130 gallon oak barrels coopered from French and Hungarian oak in which it then aged for approximately ten months. The final phase consisted of eight months of bottle aging before release.
