We present you his Picpoul de Pinet . This region is the largest in Languedoc to produce white wine. It is a wine made from 100% Picpoul grape .
The grapes are harvested during the coolest hours of the day to avoid the risk of oxidation. They are immediately taken to the cellar to be pressed in the pneumatic press. The juice is then placed in tanks in order to start fermentation in rather low temperatures in order to preserve the aromas. The aging of Picpoul de Pinet is done in stainless steel tanks on fine lees until spring.
The climate of the area is Mediterranean, the vineyard benefits from the sea breeze and a lot of sunshine during the day. The soils are composed of a single limestone plateau.
