Color: straw yellow with greenish highlights
Aroma: notes of white fruit (peach and pineapple) along with hints of jasmine flowers
Flavor: fragrant and savory on the palate with a balanced acidity and a delicately fruity aftertaste.
The Chardonnay grapes, picked at proper ripeness levels, were immediately pressed in the cellars. After this soft pressing, the must was chilled and remained at a temperature of 50° Fahrenheit (10° centigrade) for 24 hours to favor a natural static settling of the impurities. The clean and clarified must was fermented with selected yeasts in temperature-controlled stainless steel tanks at a temperature of 61° Fahrenheit (16° centigrade) in order to fully bring out the aromatic patrimony of the grapes. The following phase, that of the aging of the wine before bottling, took place entirely in stainless steel tanks.
Grape: Selected grapes cultivated in the vineyards of the Maime estate in San Pietro Vernotico (province of Brindisi) and in the vineyards of the Bocca di Lupo estate at Minervino Murge (province of BAT).
