The palate is finely structured with subtle flavours of roasted cashews and brioche from extended time on lees. Fruit is harvested during the cool of the night and gently handled in the winery to preserve the delicate fruit flavours. The fruit undergoes malolactic fermentation with the Chardonnay and Pinot Noir parcels being kept separate until the final blend. Prior to tirage the base wine is matured on lees for an extended period to maintain freshness. The base wine is kept on tirage for 12 months to build extra complexity and texture in the final wine.
