TASTING NOTES
An intense, garnet-red robe, and a complex bouquet combining delicious hints of stewed fruit, soft spice, leather and roasted coffee. Full-bodied and round on the palate, with smooth tannins and a good ageing potenial.
DESCRIPTION
The grapes are harvested by hand and sorted twice, first in the vineyard and then at the winery.
Vinification is tailored and adapted to each grape variety. The Carignan and Syrah are vinified in whole bunches, with carbonic maceration of 10 to 18 days. The Grenache and Mourvèdre are vinified in the traditional manner (maceration of 15 to 20 days), after the grapes have been de-stemmed.
The wine is then transferred to barrels for ageing of 10 to 12 months, depending on the specific characteristics of each vintage, in our Gasparet cellar.
