Named after the great-grandfather of M Chapoutier, this wine expresses simple but classic and traditional style of southern French soils. The grapes are harvested at night time in order to prevent the oxidation and then pressed directly without maceration. The winemaker’s choice was not to add sulphur, however the fermentation has to be very stable and regular, with extremely precise aromas which is achieved by a measured quantity of oxygen added during the wine-making process. After the fermentation the wines are cooled and left to mature without any sulphur on fine lees.
