DESCRIPTION
The manufacturing of the grappa is carefully regulated. In the production of white wine, grapes are usually pressed before the fermentation process begins. red wines are made by allowing the grapes to ferment in order to recover the coloring and flavoring from the skins. The grapes are then pressed and the mash is separated from the grape juice. Mäki is an important raw material for grappa. After an often complicated distillation process, Grappa is ready to drink. However, under Italian law, it must be kept in a bottle for six months. Grappa can also be stored in different wood barrels, giving it color and flavor. Tommasi Grappa di Amarone has been outdated in small oak barrels for 2 years.
