Vineyard
The site : this vineyard is the northernmost of the entire Joseph Drouhin estate in the Chablis appellation area. It is one of the seven Premiers Crus due to its excellent exposure and the concentration of Kimmeridgian pebble soil, which often gives Chablis a very recognizable typicity.
History & tradition : in the 1960s, when the Chablis vineyard was in full abandonment, Robert Drouhin believed in the potential of this soil ravaged a century earlier by phylloxera. He is among the first Burgundian owners to showcase it, with wines typical of their original terroir.
Floor: Kimmeridgian limestone containing billions of small marine fossils in a whitish cement which must have been the bottom of the ocean ... 130 million years ago. This marine origin gives a unique flavor to Chablis wines.
Surface area of ​​the Estate : 1.78 ha.
Average age of the vines : 28 years.

Viticulture
Organic cultivation since 1990 and biodynamic since 1999.
Soil maintenance : according to ancestral methods. Plowing, hilling in the fall, beginning in the spring. Intermediate inter-plant work with manual tools.
Treatments : only products authorized in organic cultivation: infusions and decoctions of plants, sulfur and copper, rock powders. We preserve natural predators.
Planting density : 6,250 vines / ha.
Pruning : Double Guyot Vallée de la Marne.
Yields : We are targeting the old base yield, which is the current authorized yield minus 20%. Average yields at the Estate: 57.67 hl / ha (yields of the basic appellation: 58 hl / ha).

Vinification
Harvest : manual.
Pressing : very slow, to respect the fruit. The last press juices are not retained.

Breeding

Duration: 7 to 8 months.

Throughout the process, decisions are made mainly on the basis of tastings. This data is then completed through technical analysis. As with all of the House's wines, absolute priority is given to expressing the terroir and respecting the vintage effect.

Tasting by Véronique Boss-Drouhin
A wine that is both fresh and straight, typical of the Chablis region. The color is crystalline straw yellow, with green reflections. The mineral and complex nose reveals scents of citrus fruits and white flowers. On the palate, the attack is frank. . A nice balance between fat and minerality, a very wide aromatic palette: citrus fruits, vegetal notes such as asparagus or artichoke, hints of marine scents ... .
