This classic yet eclectic wine goes as well with traditional cuisine (shoulder of lamb with herbs, stews and marinades) as with more inventive dishes (duck with figs, Caribbean sausage mashed sweet potatoes, monkfish with saffron ), or even Indian cuisine or multiple Asian flavors.
Moderate aging in barrels then brings the roundness and elegance that are revealed during the final assembly.
